Reorganizing md files and preparing to publish #5

hey @clairezxy and @TenzinJinpa2019 - just a quick heads up, I'm doing some more re-organizing and housekeeping to add and move some files in preparation of getting things published online.

I'll close this issue (and tag you) when I'm finished!
