feat: light color theme #86

White text on black background is hard to read, would like to see a light color mode installed. If you don't mind doing it, I'd like to create this setting myself.

Right now, I'm forcing dark mode in the VitePress settings. I don't plan to support light mode at the moment, but I'll consider it if I receive a PR.
