nkf インストール

$ brew install nkf

$ nkf --version

 --ic=<encoding>        Specify the input encoding

 --hiragana --katakana  Hiragana/Katakana Conversion

文字コードの自動判別（現在のファイルの文字コードを確認）

$ nkf -g sample.txt
UTF-8

文字コードをShift-JISに変換して別名ファイルへ保存

$ nkf -s sample.txt > sample.sjis.txt

$ nkf -g sample.sjis.txt
Shift_JIS

文字コードをUTF-8に変換して別名ファイルへ保存

$ nkf -w sample.sjis.txt > sample.utf8.txt

$ nkf -g sample.utf8.txt
UTF-8
