Replace Stamen toner with alternative map style #11

Stamen toner is no longer available as a basemap, so we need to find an alternative.

This Leaflet Providers github project looks really helpful for auditioning new options: https://leaflet-extras.github.io/leaflet-providers/preview/index.html

For the workshop, we'll want something fairly generic that doesn't require a lot of steps to set up (i.e. no registration would be helpful).

It looks like the OSM people worked on a modified version of the Stamen toner base map but I haven't been able to get it to work: https://github.com/openmaptiles/maptiler-toner-gl-style?tab=readme-ov-file
