Update scholar_uc app to use Sufia 7.3.0 #1231

Point to the published Sufia 7.3.0 gem instead of GitHub.

Fix any broken tests.

We have 100 test failures in our app when using the final Sufia 7.3.0, but I suspect most of those will be fixed with just a few tweaks.
