Expose password policy #20

This PR adds the password_policy parameter to all mappings to that it can be configured from the .env file.

maybe this PR should wait until #19 is solved for better testing.

Nah, it's mostly fine as it is ... I'll update the PASSWORD_POLICY arg a bit in the docs after merging :)
