What does this do/fix?

Updates to the theme.json config and adjustments to other files to accommodate new variables.

• Added new color options designated in the Figma designs.
• Updated vars that were changed/removed from the color palette.
• Due to linting errors, some files were updated with adjustments to comments, and some files were moved to their own partials in order to pass linting.

This is the first pass on theme.json and I fully expect more changes to be introduced as we being patterns and find a need to add/remove/adjust settings in that file.
