Update auth strategy and associated deps #25

Updated Phoenix and the various Ueberauth strategy dependencies.

NOTE: Some override: true were added to overcome dependency conflicts

mix test passes and I have tested the GitHub auth strategy. Other strategies are untested for lack of public-facing test servers.
