This pull request modifies numerous sections of the V2 README to align it with the switch to Next.js

Updated dependency installation instructions.
Included port information to the Usage section.
Updated Tech Stack with Next.js and it's dependencies.
Updated How It All Works and Give Me Something To Do to be friendlier for newcomers.
