Bump R2DBC to 1.0.0, must bump all driver deps with R2DBC 1.0.0 compatible ones
kotysa-spring-jdbc and kotysa-spring-r2dbc will use Spring 6 : spring-jdbc and spring-r2dbc are merged I think, and we would probably require Java 17
Update Spring samples to use Spring Boot 3, they will require Java 17
