chore: update dependencies and move to yeoman-generator^5 #52

I was going to get rid of a few npm warnings and vulnerabilities, but then did some yak shaving instead.

Jokes aside, I

did update a few dependencies, which solved this issue we had with node 18: https://github.com/SAP/generator-easy-ui5/issues/105
did upgrade to yeoman-generator^5 as suggested in https://github.com/ui5-community/generator-ui5-project/issues/23. I didn't want to open the CommonJS/ES6 door, though, which is why a few dependencies remain untouched for now.
