Updated documentation

Description

The documentation has been restructured and updated with new examples in the form of Jupyter lab notebooks. The notebooks are now rendered in the documentation with the help of myst_nb.

The documentation conda environment has been updated with all necessary sphinx extensions.

Todos

Some things that need to be considered.

• [ ] The example notebooks in the documentation need more explanations and/or better descriptions
• [ ] The API documentation needs a descriptions and examples as well.
