fix video quality issues #69

This makes three changes which improve the video quality issues we've been observing:

Use our own fork of galicaster which has a bug-fix for epiphan devices,
Uses the force flag for the git Ansible module to make sure that the checkout succeeds in place of local modifications (e.g. the QR code plugin)
Set the v4l2-split profile to use 1080p and 30fps.

This works, however (and it might be unrelated) OCRing a 3 minute video took almost 1.5 hours after this fix. Could it be that an increase of resolution/quality requires much more work on the video segmentation task?

I'm going to merge this, the example that took over an hour to do the text extraction task was probably a poor choice of test media, it had LOTS of text on the screen.
