Add functionality for the manager to launch an EOS image based on user selection, providing more flexibility in deployment.

Describe the feature you are requesting, as well as the possible use case(s) for it.

[ ] Design user interface for EOS image selection (prism)
[ ] Implement image selection logic in the manager
[ ] Create a catalog or registry of available EOS images (reported on the grpc API)
[ ] Add logging for image selection and launch events
[ ] Create documentation for users on image selection process
[ ] Add API to upload EOS images to manager
