Convert utf-8 characters to ascii #540

UTF-8 characters causing some issues when uploading pipelines to icav2. 'Diff' comparisons don't work as expected since docs 'appear' differently. Fix by removing all utf-8 characters and converting to ascii chars instead

Okay - went looking for diffs and was a bit like 🧐. This is a strange issue.
