update: Adding docs architecture and initial posts #98

This PR adds a docs folder that is used by vitepress to build a set of Underlay docs. I've included an initial pass at a series of pages, but they are rather stream-of-consciousness and need a couple more passes and outside editing before being publicly useful.

Functionality wise this site looks beautiful and works great! I'll take some time to read through all the docs and give some editorial feedback but we can merge this in and just publish it 👍
