Interesting, I though chromium doesn't have reader mode but it seems they are hiding it under a flag and some heuristic algorithm. I will categorize this as a feature request.
Other browser must have implemented their own version, there is no button in vanilla chromium, unlike firefox.
Please explain why your feature request fall into the scope of ungoogled-chromium?
I don't know if this is an option or not at present. I haven't found an answer for this elsewhere.
Please describe the feature you would like to have
I can only enable simplified view for a web page using a pop-up message at the bottom of every webpage. This makes enabling the view difficult. I would like a different way to enable this view.
Describe the solution you'd like
Any option that changes how simplified view is activated. Similar Android browsers and desktop Chromium add this to the right of the URL bar as a toolbar shortcut.
Describe alternatives you've considered
An option in the menu on the top right, on tapping the URL bar, or even on the tab switcher.
Additional context
Once the pop-up is dismissed, I don't know how to get it back without refreshing the page. Other times, it sometimes minimises on a page that's difficult to scroll which makes it difficult to enable.
I have looked through all the menu and all the available feature flags and didn't see an option for this. The only relevant one I saw was whether to enable it for some or all sites, which doesn't solve my issue. I haven't found an answer to this after looking for a while. I know this isn't a helpdesk, I really don't know where else to ask.
I am not sure this is a feature or not already, since it is implemented in other mobile browsers.
Example screenshots below.

Image 2: Opera For Android has their version of the feature available where Ungoogled Chromium places the toolbar shortcut.
