Have you tested that this is not an upstream issue or an issue with your configuration?

[ ] I have tried reproducing this issue in ungoogled-chromium with a new and empty profile using --user-data-dir command line argument and it could not be reproduced there

Do you have a Mac with Apple Silicon (M1 - M3 chips currently), perhaps? In that case you need the arm64 and not the x86-64 version of the release you want to install

Yeah I'm on M1 but wouldn't it still run with Rosetta?

No, you should get the arm64 version of Ungoogled-Chromium.
