How weird is that? I'm trying to find a solution for it but I can't find anything.
Hello guys. I had the same problem for a long while. Figured out it didn't have to do anything on the phone-end. I realised the Unified Remote application wasn't running on my pc. Rest of commands worked fine, except for the screen sharing. I turned on the Unified Remote in the Start-up apps of my pc, so it automatically runs everytime I run my pc. Hope this helps. Updating/reinstalling application on pc would've been my next step.

This definitely is not the problem here, at least not for me. The software is definitely running on my PC, yet I still can't use the phone app properly.
Same problem here. Latest iOS version and Win 10 (server)
Screen mirroring presents problems sometimes. This is a known issue, the team is trying to identify what is causing it. Latest report of this problem is from user in ticket 5963 (https://unifiedremote.zendesk.com/agent/tickets/5963): when using the remote, it shows a black screen with one white pixel in the top left hand corner.
