Collection & STAC read/write updates

• Fix to add a public accessor for "datasets" via collections,
• Fix to some assumptions on the directories

@mike-gangl Doesn't the package name need to be updated in the pyproject.toml file as well from unity_py to unity-sds-client?

I felt that was a pretty major change and wanted to push out this update before getting to that. The package is simply published as unity-client-sds in pypi; but can still be imported as unity-py.

I think you meant the "package" name being changed (e.g. https://github.com/unity-sds/unity-py/pull/43/files#diff-50c86b7ed8ac2cf95bd48334961bf0530cdc77b5a56f852c5c61b89d735fd711R11). That's what i didn't change since it probably needs more testing. i wanted to get a version out so that the ADS team wasn't blocked on a few items.
