The intro to this project suggests in can use the rx/tx line

Do you have any more information on that?

Specifically what connector does this come off and what voltage conversion needs to happen?

I've never used the RX/TX lines myself, however the fuji-iot project (https://github.com/jaroslawprzybylowicz/fuji-iot) has a schematic for a Raspberry Pi hat that you should be able to modify to suit
