Various issues with how Activities are indicated

Looking at validator output (https://validator.openactive.io/?url=https%3A%2F%2Fapp.upshot.org.uk%2Fapi%2Fv0%2Fopenactive%2Fv1.0%2F&version=2.0&validationMode=RPDEFeed), various changes should be made to how activities are represented.

• structurally, activities must be represented as skos:Concepts (as illustrated here: https://openactive.io/modelling-opportunity-data/EditorsDraft/#relating-events-to-physical-activities). That is to say, they should be of @type Concept, have an identifier, an inScheme attribute, and a prefLabel.
• activities should be drawn from the OpenActive Activity List: https://activity-list.openactive.io/en/hierarchical_concepts.html
  • for example, 'Junior Athletics, 19-20' should be represented using the OpenActive 'Athletics' Concept (https://activity-list.openactive.io/en/concepts/_4d280e1b-a370-4582-ab4d-442b2eeaf5d4.html), with the age range being indicated in the ageRange property.
