In the last year or so we've changed the standard approach to doing lagoon.yml sync files with regards to setting defaults.
Typically, we no longer rely on the local section, but embed the defaults straight into the standard sync arguments.
This is reflected in the README, but not in the example file.
This PR rectifies that.
