feat: `SST1RSoXSDB` normalize Dataset return names to 1.0.0 #129

At some point during our August 2023 code camp, we designed an API for Datasets that includes per-point metadata (i0, it, transmission, etc.). This issue covers the first example of that API in SST1RSoXSDB.
