Update simulator environments to match QTF testing

Simulator environments were previously created specifically for test systems in the QHIN Technical Framework (QTF). Some hard coded OIDs and URNs were entered as placeholders. Update the hard coded values to match choices made for testing. Need to open a separate ticket to allow those choices to be made as a configuration at runtime, and

• Not fixed in code, and
• Not generated anew for each new test session..
