Better explanation for SCAP Composer examples #48

SCAP Composer examples need read me docs explaining meaning of "original" subdirectories, and other things that might not be obvious to a user.

From a user: "Anyway say for the Windows 10 STIG folder, under original (U_MS_Windows_10_V1R15_STIG_SCAP_1-2_Benchmark.xml) is that what we feed through the dita engine and it creates the end result?"
