Update R geoscience packages #101

This adds several geoscience packages for the R environment, per a recent request.

Steps to complete:

[ ] Add a comment to the sf package line that notes we will get a warning when the image builds
[ ] Build/push the image to staging
[ ] As the instructor to try out their notebook on staging
[ ] If it runs, deploy to prod

I'm going to try merging this into staging, since image builds now theoretically work, we can test out whether this makes the person's notebook work or not
