data tables - not reponsive

pagination and number of entries shown text should stack and center on small screen
column width not adjusting to small screen in portrait or landscape

The table has a min-width of 768px so it will not get any smaller.

We should fix the helper text (# of entries) and the pagination so they stack on small media query.
