Compatibility with React 17

[ ] Check if any changes are necessary for Ink to work with React 17 (hint: there are some reconciler changes you can copy from https://github.com/pmndrs/react-three-fiber/commit/312dcb73388e3215bb2db4f126fa5f0cd6bd7b7a#diff-71ba5da49b7a0c1fe326f05a93cdaadcd74d9afc42a5b476382d5122faa2ef72R545)
[ ] Update react and react-dom dependencies in the Ink repository and make sure tests are green
[ ] Update peerDependencies to allow both React 16.x and 17.x
[ ] Update CI config to test Ink with both React 16 and 17 (optional)

I'm just in the process of upgrading from ink v2 to v3 and I could take a look a this, if that's ok.
