Update Map Matching Mobility Explorer docs #180

This updates the Map Matching section of the Mobility Explorer docs to include the new UI for trace route, problems that occur with matching, and some screenshots.

When merged, this will go into this repo, but will not be displaying on mapzen.com (waiting for announcement to do that).
