Improve documentation of vmod_saintmode #25

Removed the $Method BACKEND .backend() block, as this is not a saintmode specific method, and only serves to confuse the functionality. Added a bit of text, in an attempt to clarify the example.

Thanks for the improvements. Can you run "make check" and update the PR when it passes? (As mentioned on irc, .backend() is necessary)
