Impressive! I wonder how they get the data into Grafana?

Grafana can ingest Prometeus metrics.

And jitsi can publish it's internals as such, quite easily: https://github.com/karrieretutor/jitsi-prom-exporter

With that, the following metrics become available for graphing:
