gcp_pubsub source examples don't document all required fields #18993

Currently https://vector.dev/docs/reference/configuration/sources/gcp_pubsub/#example-configurations (as of 2023-10-31) doesn't include the required field subscription in any of the examples. This makes it appear like it isn't a required field
