Add smoke test for windows platform

The Chore

Our CI run could use a smoke set of tests to verify that windows builds will work. The test run for this does not to be in as in depth or as long as the standard test run as we do not need to extensively re-test granular functionality.

Tasks

• Decide on the smallest set of tests that prove the app works on windows and add a yarn script to run it
• Figure out how best to test cross platform on windows, BrowserStack could be a potential solution to look at.
• Add the test run to GithubActions so it runs per commit and when there is a push to main.
