You can preserve some space at the end of the disk when install Ventoy. https://www.ventoy.net/en/doc_disk_layout.html#reserve_space
Option
---> Partition Configuration
---> Preserve some space at the end of the disk
So, assume that the fake 64GB USB disk has only 16GB real capacity, then you can preserve 48GB space, then Ventoy will only use the front 16GB space from the beginning of the USB disk.

What happened?
Pendrives with fake size dont work because boot is installed in the end of device, that not exists. Then fail on install ventoy. It's hard to find a pendrive that isn't fake in my country. I think Installing the boot partition at the beginning of the pendrive would solve this problem. I tried the alternative method with rufus, but without success either.
