make the log function write info to a log file #27

The ask is in the title. It will be helpful later on to just have a file with all the log and debug information rather than rely on the information being stored in the vs-code terminal history.

This issue should be tackled next once all the items from #19 are complete.

With a centralized jobs folder, a log file that is saved on the disk will makes infinitely more sense organizationally.
