Switch development to `main` branch #66

For this sort of handbook project, a split between main and develop branches may confuse new contributors (and me!)

Following discussion, we will trial further development directly off the main branch, so pull requests should now be made against this branch, and not develop.

This pull request adjusts the contribution guidelines to refer to main, and after it's merged, I'll fully merge the develop branch and then remove it.
