Honestly I'm considering flags to symptoms that dictate when they're allowed to appear.

I don't see this as a balance problem myself. Maint mice viruses are almost always incredibly weak, and in this example your immune system has to be under 25 for the color to even manifest and others can only get it if they eat the mouse because it's blood only. It's fun if you want it and easy to cure if you don't. I do see your argument about breaking immersions but I'm not quite convinced that mice in tunnels emitting colored smoke is that bad. Personally I'd find it amusing if I was working in my office and I suddenly see my walls change colors from the other side, and it would take a little bit for the virus to progress to that point anyways
While the colour smoke syndrome is hilarious, it CAN be a bit overwhelming for the wild ride, specially if the riders are not that versed in virology, which came to happen on a round in which newfriend wild riders tried unsuccessfully to spaceacillin some antibodies for 1 hour, but failed because the smoke kept spitting the antibiotic.
This syndrome is singlehandedly the shittiest, most immersion breaking one we have, it's beyond me that it can appear roundstart
