Get nextcloud working #79

Cloud bills have gotten cost prohibitive, and since I already have a decently beefy server downstairs, I want to see if I can continue my cloud learning with nextcloud instead of amazon/google/azure.

This story is complete when I have nextcloud deployed and configured in such a way that I can explore its offerings. This is meant to be a spike on nextcloud only.

Following the instructions here: https://blog.linuxserver.io/2017/05/10/installing-nextcloud-on-unraid-with-letsencrypt-reverse-proxy/ I found out that I still needed to go in and set the root password, and I had to exec into the docker container to run the mysql_secure_installation command.

Nextcloud was more of a social hub than anything else, not what I was looking for.
