You need to add -l option to configure these. Note that you must specify all the theme/color/size/icon options. Otherwise, the default configuration will be used.
You can also use this python script (https://github.com/odziom91/libadwaita-theme-changer) to config the user's libadwaita theme.
However, I think -l is more convenient as you can simply use sudo to configure this for the root user as well. By doing this, sudo gnome-text-editor
will show in dark mode.
Run ./install.sh -l -c dark

edit: it is only for the gnome preinstalled apps and title bar in some apps, other than that it works fine
