Currently, 1.15.x-1.18.x are available kubernetes versions in AWS EKS. This repo is built with https://github.com/virtual-kubelet/aws-fargate/blob/3508966a4d91e1f51eb06109fa1b5cc58738d419/go.mod#L41.
We will need to bump k8s version to make sure it's up to date and doesn't have compatibility issues with available EKS clusters
