fix(ci): correct RTD builds #98

Hello @almarklein, so (after a few commits), I finally managed to have the RTD ci run successfully!

If you prefer, I can squash the commits myself (or you can do so when merging).

The failing builds are related to numpy2, and apparently simple_jpeg.

Will merge as-is, since the cannot be related to this pr.
