Removes vite-plugin-eslint which is majorly broken and seemingly long abandoned- unmaintained with no pull-requests merged or commits added in the last year. (No notes from @gxmari007 in repo readme about project status ¯\_(ツ)_/¯ )

no response from project since initial issue in their repo I mentioned, nor since the creation of this PR… project is nonfunctioning and abandoned
