Incremental backup and restore: vtctldclient usage #1548

The PR follows the changes in https://github.com/vitessio/vitess/pull/13513: vtctldclient now supports incremental backup and restore flags. We therefore replace the vtctlclient examples with vtctldclient.

Replaces https://github.com/vitessio/website/pull/1546 because reasons.
