Change cacheHandler, logger and operationQueue methods on EndpointConfiguration

Make them similar to dataDeserializer, dataSerializer and so on (returning an instance instead of a Class)

this is a wontfix, since the current state of the protocols and initialization procedures used from the endpoint fit the architecture in a better way
