The sensors are under a voltage from the microcontroller. this voltage creates a electrical field around the sensor. The microcontrollers constantly reads the capacitive value of the sensor and if this value changes, the board detects this as a "touch". The value can change by introducing a conductive material in the electrical field of the sensor. This wil make the capcacitive value go up. The change can also be detected when you take a part away, for example: you start up the board with a wire connected to the sensor. The controller will read the value and take that as it's base value. If you take away the wire, the value will drop and that means a change in capacitance. This can also be detected as a "touch". So if you change anything at the sensors while the board is active, it wil detect it as a touch.
