Allows for mounting volume to /opt/solr/server/solr/mycores for persistence beyond container.

This is bit different approach than I've used previously. It is unique in the sense it is using shell script to set up core. I like it as long as it works with our current set up which Rob has confirmed. I may use this in future. Thank you @wellingWilliam for setting this up.
