Improve extensibility - Githubissues

A couple of points that could be improved to make it easier to deploy custom galleries:

Docs to use a different theme for the landing page, or an easy way to override the default without having to fork the whole plugin
Easier way to add entries to the gallery (for now we need to reinstall the plugin to pick up the latest changes from gallery.yaml)
Interoperability with other TLJH plugins
