Windows support #11

Explain why we are not supporting Windows / if in the end we can support windows, than do it.

@pipaj97 could you link me to the documentation about the missing Windows support - or add the documentation here?

I am trying to add opencadd to conda-forge and am running into problems with theseus, mmligner, and muscle: https://github.com/conda-forge/staged-recipes/pull/16114
