Debian managed to make their targetted release on August 14th, 2021. While Raspbian Bullseye isn't officially out yet, I've had some success with running Volumio on Bullseye/sid for a few months now on the pi as well.
In fact I've been on bullseye/testing since early this year, and haven't had too many big surprises. The main changes are in ashthespy/VolumioOS/tree/bullseye. All my devices (arm, armv{7,8}, x64 builds) are all running with upstream repo packages, so it's been a breeze to keep things updated.
